Banana Bread Recipe With Brown Sugar

Preheat oven to 350F (175C) and lightly grease a 9×5-inch loaf pan. Set aside.

In a large bowl, mix brown sugar and butter with an electric mixer on medium speed until light and fluffy, 1 to 2 minutes. Stir in mashed A Recipe for Banana Bread until combined. In a separate medium-sized bowl, whisk together flour, baking powder, baking soda and kosher salt. Add dry ingredients to wet and mix with a rubber spatula until just combined. Stir in nuts and/or chocolate chips if desired. Pour batter into prepared pan and bake in the preheated oven until lightly browned on top and a toothpick inserted into the center comes out clean, about 60 minutes. For a dairy-free version of this quick bread, use an egg replacer or 1/2 cup applesauce in place of the eggs. You may want to increase the amount of banana puree by an extra tablespoon to make up for the added liquid.

If you’d like to freeze this quick bread, wrap tightly in plastic wrap and then in foil. It will keep for up to 3 months in the freezer if stored correctly. This banana bread is delicious toasted as well.
